Use whatever veggies you have or love, from carrots to leeks to broccoli or asparagus, any spring vegetables will work here.
Healthy Creamy Pesto Sauce
Most creamy sauces are made with ingredients like heavy cream or cream cheese, which of course make for great flavor, but it's not always the healthiest choice.
With so many people going dairy free these days, I wanted to share a recipe for a rich, creamy sauce that doesn't need dairy. What's my secret? Coconut milk!
Full fat coconut milk is a great addition to sauces and soups to thicken them up without the heavy dairy, and I promise you won't taste any coconut flavor in your dish.
I will say however that this recipe is not 100% dairy free because of the pesto, but there are cheese-free pestos available at grocery stores if you prefer.
This store bought pesto in particular is delicious and I highly recommend it. If you love to make your own though, here's an easy recipe for basil pesto.

Using Spring Vegetables
Spring vegetables such as leeks, green peas and asparagus are the perfect compliments to this pasta dish. They each have a light flavor that doesn't compete for flavor with the lobster, but heavy enough for a thicker sauce.
You can of course add in other spring vegetables such as snap peas, broccoli, cauliflower or fennel for example.

For those of you who would rather have the work done for them, any fish market will have fresh cooked lobster meat for sale (although it is quite pricey these days!). Once you have the lobster meat home, do a rough chop into smaller bite size pieces.
The most important part of this entire dish is this: add the lobster meat at the very last step! Remember that the lobster is already cooked, and adding it in too early will overcook the meat and you'll end up with tough, chewy lobster...and no one wants that!
The Best Pasta EVER
If you've never tried radiatori pasta, please do. Fun shaped pasta is always a hit, but this is adult fun-sized pasta, and it holds up so well to heavier sauces like a creamy pesto.
Of course you can also use spaghetti, linguine or penne for this dish, just stay away from smaller shaped pastas or angel hair.
