Insider Series #2: A Master Class in Cape Cod Haddock & Fluke Fishing

by Ryan Collins

The Insider Series brings you never-before-published seminar recordings from some of Cape Cod's most respected charter captains and local anglers. These exclusive presentations were recorded at live My Fishing Cape Cod events but have remained in the vault—until now. Released monthly from November through May, these sessions provide essential winter education while you're dreaming of the season ahead. Watch and take notes now—we can't guarantee these seminars will remain freely available to members forever.

We're honored to share this recording from our 2023 My Fishing Cape Cod seminar featuring Captain Jimmy "The Greek" Koutalakis of On Time Charters. Jimmy is known throughout Cape Cod not just for his expertise, but for his meticulous preparation, his willingness to experiment, and his dedication to putting his clients on fish—consistently.

For years, Jimmy has been perfecting his craft across every body of water on Cape Cod, targeting every species that swims here. While many know him for his specialty in targeting trophy "doormat" fluke, his knowledge extends far beyond those species to haddock, cod, sea bass, and more.

Jimmy rarely does seminars or public speaking. But thanks to his relationship with MFCC member Bruno Demir of Cape & Islands Mitsubishi and My Fishing Cape Cod, he graciously took time to sit down and share the techniques and strategies that have made him one of the most successful charter captains on Cape.

What makes Jimmy special isn't just his fishing ability—it's his scientific approach to the sport. He doesn't follow trends; he creates them through experimentation and careful observation. Whether it's spending five years searching for giant fluke in deep water, netting spearing at boat ramps in the middle of a December night to prepare for the next season, or figuring out exactly how cold-water temperatures affect fish behavior, Jimmy is always thinking several steps ahead.

This seminar captures Jimmy's generosity in sharing hard-won knowledge that took him decades to acquire. His detailed explanations of rigging, his insights into fish behavior, and his willingness to reveal his exact techniques demonstrate a true professional who cares about elevating the entire fishing community.

We're grateful to Jimmy for taking time away from his busy schedule to teach us, and we're honored to preserve this knowledge for current and future generations of Cape Cod anglers.

What Jimmy Shared With Us:

Jimmy's seminar covers the spectrum of Cape Cod bottom fishing, from early spring haddock through prime summer fluke season. His willingness to share specific techniques—insights he spent a lifetime developing—was a true gift to the community:

  • Understanding how fish use structure to conserve energy

Bay vs. Offshore Fishing

  • Key differences between Cape Cod Bay and offshore environments
  • Why certain areas hold fish year-round while others are seasonal
  • Jimmy's summer haddock secret: productive fishing is not as far offshore as you think
  • Avoiding dogfish with the right techniques

Fluke Fishing Mastery

  • Why current speed is critical to success and his minimum threshold
  • His breakthrough discovery about how trophy fluke behave differently
  • Five years of research and what it revealed about finding big fish
